Miso Soup

Yields 4 servings

Ingredients:

0.2 ounces Wakame

4 ounces soft tofu

1 cup organic vegetable broth

3 cups water

1 ½ tbs miso paste

2 spring onions

Directions:

Heat broth in saucepan

Soak wakame by covering with water in bowl

Melt miso by adding broth

Pour melted miso into pan

Cut into cubes of ½ inch

Add to saucepan and reduce heat

Add wakame

Leave on low heat for a few minutes – do not boil
